Viking salad is a quick, easy, healthy, and delicious cabbage salad with a little bit of a kick. It's named after the Norwegian couchsurfers it was originally invented for.
This recipe is especially quick with a food processor. Chop the cabbage into coleslaw-sized bits and shred the carrots. Chop the apples into small, thin slices a few mm thick. Dice the jalapenos very finely, and remove as much of the seeds and veins to accommodate your preference for spiciness. Removing all of the innards will provide a very slight kick to the salad.
Mix all ingredients together in a large bowl, and enjoy.
