Muttar Paneer ============== This is a very healthy version of an amazing Indian classic that is also easily customizeable. And everytime we make it we can't imagine wanting to eat anything else. Goes well with oven naan (recipe available from http://elatedverve.com/recipes/naan.html) and is improved with homemade paneer (recipe available from http://elatedverve.com/recipes/paneer.html). You can fit 4 or 5 recipes worth in a ten liter stock pot and freeze for later, and you can also add extra peas as desired. Ingredients ------------ Sauce paste ----------- - 1 cup chopped onion - 1 can diced tomato - 1 tbsp ginger paste - 1 tbsp diced garlic - 3-4 diced jalapenos - 1/2 cup raw cashews - 1/2 of a bunch of cilantro - 1 tsp black peppercorns - 1 inch of cinnamon bark, or 1/2 tsp ground cinnamon - ~5 whole cloves The rest -------- - 1 tsp cumin seeds - 4 tbsp ghee - 1/2 tsp turmeric - 1 tsp chili powder - 1 tsp garam masala - Salt to taste - 3 cups frozen peas - 500-600 grams diced paneer Preparation ------------- Put all of the sauce paste ingredients in a blender. Blend until smooth. In a large pot, saute the cumin seeds in the ghee. When the seeds are brown, add the sauce paste. Let simmer for 10 minutes. You'll probably need to add some water and keep a lid on the pot to keep sauce from spattering everywhere. Add the turmeric, chili powder, garam masala, salt, peas, and paneer. Add enough water for the peas to cook. Let simmer until done. Serving -------- Serve over basmati rice, and (optional but strongly recommended) naan.
